Creamy Ham And Potato Soup

4 hours to prepare serves 6

INGREDIENTS
8 cups russet potatoes, cubed (6-7 potatoes)
2 (8 oz.) packages cubed ham
1 (32 oz.) carton low-sodium chicken broth
1 1/2 cups heavy cream or half-and-half
1/2 cup sour cream
1/4 cup all-purpose flour
2 ribs celery, diced
2 carrots, diced
1 yellow onion, diced
Kosher salt and freshly ground pepper, to taste


PREPARATION
Place potatoes, ham, celery, carrots and onion in slow cooker, and season generously with salt and pepper, then pour in chicken broth.
Cover slow cooker and cook on high for 4-5 hours, or until potatoes are cooked through and fork tender. Lightly mash potatoes (they don’t need to be smooth).
In a small bowl, whisk together heavy cream and flour until flour is completely dissolved, then stir mixture into soup, along with sour cream.
Cover slow cooker again and cook on high for 15-20 minutes, or until soup is hot and creamy.
Ladle soup into serving bowls and serve hot. Enjoy!

Skillet Cherry Cobbler
          
SERVES 8
PREP 10 Min
COOK TIME 15 Min
READY IN 25 Min
All you need is 20 minutes and 5 ingredients to whip up the cherry cobbler of your dreams. Warm, gooey, and satisfying, 
this Skillet Cherry Cobbler will be a favorite for all seasons.

What You'll Need:

2 (21-ounce) cans cherry pie filling
1/4 cup sugar
1/2 teaspoon ground cinnamon  Coupons
1 (10.2-ounce) package refrigerated buttermilk biscuits (5 biscuits), each biscuit cut into 6 pieces
2 tablespoons butter, melted

What To Do:

Preheat oven to 375 degrees F.
 
In a cast iron skillet, heat the cherry pie filling over medium heat until hot.
 
Meanwhile, in a large bowl, combine sugar, cinnamon, biscuit pieces, and butter; mix until evenly coated. 
Place mixture over cherry pie filling.
 
Bake 15 to 20 minutes, or until golden.

Fettucine Alfredo MY WAY

Well, busy day ahead and besides, I believe in easy when possible SO, that said.....here is my recipe....

Buy a jar of Alfredo Sauce, put in pan and heat.
Buy Linguini Pasta, cook according to directions.
Put Sauce on top, add some Parmesan Cheese and ENJOY!!! Quick and delicious.. I do add some chicken sometimes, maybe a few "trees" of broccoli, your choice....
Buy a loaf of French bread, or garlic bread, warm and you "got a meal!"
Anybody can do this!!!!

This Southwestern-Style Potato Bake is one of the tastiest dishes that you can make for dinner tonight! This recipe combines a delicious mix of flavors including ground beef, taco sauce and seasoning, hash brown potatoes and Cheddar cheese. You can make it dinner as a hearty meal everyone will surely enjoy, you might also consider swapping out the beef for scrambled eggs, and turn this easy casserole into a delicious breakfast option.

Ingredients

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • 1 package taco seasoning
  • ½ onion, diced
  • ½ red bell pepper, diced
  • 1 cup taco sauce
  • 2 bags refrigerated hash brown potatoes
  • 2 cups shredded Cheddar cheese
  • salt and pepper

Instructions

  1. Heat a cast iron fry pan over medium-high heat. Add olive oil. Brown the beef, add in taco seasoning and mix well.
  2. Add 1 cup of water to the pan. Bring to a boil and continue cooking until most of the water has cooked off. Add onions and peppers to the pan. Sautee until the veggies are soft.
  3. Meanwhile, preheat the oven to 350 degrees F.
  4. Mix in taco sauce and hash brown potatoes. Stir to combine well.
  5. Top with the cheese and then transfer the pan to the oven. Bake until the potatoes are cooked through and the cheese is melted, bubbly and lightly golden brown. (about 20-25 minutes)
  6. Remove from the oven and allow to cool for 5 minutes before serving.

Family Meatloaf

  • 2 pounds ground chuck
  • 1 1/2 cups finely crushed butter-flavored crackers
  • 1/2 cup chopped onion
  • 3/4 cup ketchup, divided
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 slices bacon
  • 1 tablespoon prepared yellow mustard
  • 2 tablespoons brown sugar
What To Do:
  1. Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
  2. In a large bowl, combine beef, cracker crumbs, onion, 1/2 cup ketchup, the eggs, salt, and pepper; mix well. Form meat mixture into a loaf on baking sheet. Lay bacon over top of meatloaf.
  3. Bake 1 hour.
  4. Meanwhile, in a small bowl, combine mustard, brown sugar, and remaining 1/4 cup ketchup; mix well. Spread evenly over top of meatloaf. Return to oven and bake 15 more minutes, or until no longer pink in center.

Cheesy Bacon Ranch Potatoes

45 min to prepare Serves 8

INGREDIENTS


  • 6 medium russet potatoes, peeled and chopped into 1/2 inch cubes
  • 2/3 cup mayonnaise
  • 1 packet Ranch seasoning mix
  • 4 ounces cream cheese, softened
  • 3/4 cup onion, finely chopped
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese, divided
  • 6 slices bacon, cooked and crumbled
  • Fresh rosemary for garnish

PREPARATION


  1. Preheat oven to 375 and grease a 9x13 baking dish.
  2. In a large pot, add chopped potatoes and 2 teaspoons of salt. Cover with water and simmer for about 10 minutes. Drain and set aside.
  3. Combine mayonnaise, ranch mix, and cream cheese in a large bowl. Stir in potatoes, onion, pepper, salt, and 1 cup of cheddar cheese. Add 1/2 of the bacon and mix.
  4. Pour the cheesy potato mixture into the prepared pan, cover with aluminum foil, and bake in the oven for 25 minutes.
  5. Remove pan from oven, uncover, sprinkle with remaining cheese and bacon, and bake uncovered for an additional 10 minutes.
  6. Garnish with rosemary, and enjoy!

Good Kitchen tip

As I cook, I wash dishes, when I have finished my cooking, and we sit down to eat, all the dishes are DONE, and afterward the only thing left is the serving dishes and the utensils and plates we used....it takes very few minutes to clean up after that and then:::::::I do not believe in "leaving things", it just makes it harder and longer to clean up and if someone say "leave it for later", I comment, " I could but it would still have to be done and I am the one that will STILL have to do it." then I clean up:-)

I fix the coffee pot for the next morning, when I get up all I have to do is "hit the button", ( my pot is not programable:-))

That is just 2 things I do and as I go through this day I will see if there is anything I do "automatically" to make "life more simple". I will then share with you.

as i age, i am dealing with how much i have changed so need to change things about myself. for instance, when i painted a room, i would start at one corner and never stop til i did the whole room and got back to that corner again. 

now .. i wouldn't paint a room, no way no how! lol 

but actually, when i have big jobs (like doing dishes is now on the 'big job' list lol) i dont usually do things in one shot. i do for five or ten minutes, go away and come back like 15 minutes later. that's what often helps me accomplish stuff.

your life should be leisurely .. take in the views, the various cultures you are passing through, meet and greet new people and enjoy everything. dont put pressure on yourself cause who really cares.

Chili Cheese Pie

I know, I know, haven't been on here for a month of Sundays, but real life (RL) sure can take up time!!!! But, got this yesterday and decided to share here as well, it............

This sounded too good to NOT try.....I know it will freeze so make it, eat what you want, freeze and eat the rest at another time.
BTW If I don't have all the ingredients I am going to "fake" it, I don't have a green pepper on hand so no green pepper...tomorrow's supper:-)

Prep Time: 15 mins Total Time: 45 mins Servings: 8

Chili Cheese Pie

ABOUT THIS RECIPE
"This a quick and easy favorite in our house. You will need either one large
casserole dish or two small ones. The long kind (9x6, I think) will hold the
whole recipe."

INGREDIENTS
1 (8 1/2 ounce) boxes Jiffy cornbread mix
1 egg
3 teaspoons sugar
1/2 cup milk
1 (15 ounce) cans prepared chili ( any brand is fine. I use the Wal-Mart brand)
2 cups shredded extra sharp cheddar cheese
1/2 cup mild salsa
1 large onion, minced
1 green bell pepper, diced small
1 can chickpeas, drained
2 slices butter ( 3 if you have to use two casserole dishes)

DIRECTIONS
1. Mix egg, sugar, milk and cornbread mix.
2. The box may call for less milk but a half cup makes the batter loose enough for this recipe.
3. Butter your casserole dish and pour in batter. Set it aside.
4. Mix onion, bell peppers, chickpeas, salsa, chili and half the cheese and spoon on top of the corn
bread batter.
5. Top with the rest of the cheese.
6. Bake at 350 degrees for 30 minutes or until the cheese is browning and bubbling.
