Over-the-Rainbow Minestrone

Soup Recipe

Must try this one!!!!!
Will do in a crockpot!
TOTAL TIME: Prep: 20 min. Cook: 6 hours 20 minutes
MAKES: 10 servings

Ingredients

  • 4 stalks Swiss chard (about 1/2 pound)
  • 2 tablespoons olive oil
  • 1 medium red onion, finely chopped
  • 6 cups vegetable broth
  • 2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
  • 1 can (16 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
  • 1 medium yellow summer squash or zucchini, halved and cut into 1/4-inch slices
  • 1 medium sweet red or yellow pepper, finely chopped
  • 1 medium carrot, finely chopped
  • 2 garlic cloves, minced
  • 1-1/2 cups uncooked spiral pasta
  • 1/4 cup prepared pesto

Directions

  1. Cut stems from chard; chop stems and leaves separately. Reserve leaves for adding later. In a large skillet, heat oil over medium heat. Add onion and chard stems; cook and stir 3-5 minutes or until tender. Transfer to a 6-qt. slow cooker.
  2. Stir in broth, tomatoes, beans, squash, pepper and carrot. Cook, covered, on low 6-8 hours or until vegetables are tender.
  3. Stir in pasta and reserved chard leaves. Cook, covered, on low 20-25 minutes longer or until pasta is tender. Top servings with pesto.Yield: 10 servings (3-3/4 quarts).

Breakfast Roll Up with a touch.....

Thought I would share my recipe for a breakfast roll up.

1 egg whisked with salt, pepper, and 1 tsp of Kikkoman teriyaki marinade and sauce. cheese, onion, bacon, sausage, tomato, and 1 8" flour tortilla.
 MMMMMMMMM Good.

also;
Whenever Elaine made me an omelet, she would use 2-3 eggs and a tbsp. of that Kikkoman sauce. It just added some extra flavor.​

Donut Mug Cake


 Lordy, this looks good!!!!! I made it today and next time I will not use as much nutmeg....also I used a 12 oz mug and it did NOT look like this picture....
Still, it was GOOD!

Baked Pork Chops

Here is a recipe I found REALLY QUICKLY on the web....this sounds good, if you don't want the bbq flavor just salt, pepper a tad bit of oil and cook as they suggest here:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small bowl, thoroughly blend soy sauce, vegetable oil, Worcestershire sauce, lemon juice, brown sugar, and ketchup.
  3. Place pork chops in a medium baking dish, and spread with 1/2 the sauce.
  4. Bake pork chops 30 minutes in the preheated oven.

Toothbrush tips in the kitchen..............

That toothbrush is good for more than just maintaining those pearly whites. Use the fine bristles of a toothbrush to find the edge of plastic wrap, remove the silky strands from freshly husked corn...

Tip: Maximum crown on muffins

For maximum crown on muffins, let the corn muffin batter rest for 3 minutes, stir it lightly, then fill muffin cups.

Breakfast Roll-Up

1 slice bacon OR one sausage crumbled....cooked
1 egg scrambled
1 T chopped onion
2 slices of red, yellow or green pepper
cheese of your choice!
1 tortilla (I prefer a flour tortilla) coated with your favorite jelly:-)

Put the egg, bacon OR sausage, onion and pepper on the tortilla, and cheese, roll up....
serve

Fantastic and GOOD breakfast.

English Muffins and Peanut Butter and....

A fantastic breakfast, energy giver and nutritional is;

English Muffins and REAL Peanut Butter and UNSWEETENED Applesauce.

Slice the Muffin, lightly butter one side of each piece of muffin, grill or toast.....

While warm put on Peanut Butter and top with unsweetened applesauce....

Really good with hot coffee:-)

Meltable Grilled Cheese Sandwich

Meltable Grilled Cheese Sandwich

2 slices of velveeta cheese
2 slices of white bread
Butter-softened
Mayonnaise-NOT Miracle Whip

Put Mayonnaise liberally on one side of each slice of bread....lay cheese slices on the bread....make it a sandwich....put butter on both sides of the "sandwich", put on heated skillet or grill, cook carefully until golden brown.

Remove, put on plate and enjoy....GREAT with Tomato/Basil Soup!\

Kielbasa, Onions and Potatoes

1 pkg Kielbasa Sausage...sliced in bite sized pieces
1 medium onion....slice any way you want it
1 potato.....slice in thin slices like chips
2 T butter
1 T Olive Oil

Put oils in 10 inch skillet, put skillet on medium heat, put in onion slices and cook till softening, then add potato slices and Kielbasa Sausage slices. Cover and cook on medium low heat, stirring every once in a while. Let it cook about 45 minutes. Serve with Saltines....enjoy:-)

Jiffy Corn Casserole

JIFFY CORN CASSEROLE 
1 can whole kernel yellow corn, undrained
1 can cream style yellow corn
1 (8 oz.) carton sour cream
2 eggs, beaten
1 box Jiffy corn muffin mix
1 stick butter, melted

Mix all together and pour into large, lightly oiled casserole dish. Bake at 350°F for 55 to 60 minutes.

Did a "Google" and found this, cooked it tonight and it is so good!!!!! 

Today's Hint/Tip is......

Today's hint/tip is:

Use silicone bakeware.....to make it "sturdy", put it on a cookie sheet or a firm oven proof tray.....no problem then, and the clean up is so easy with silicone bakeware!!!
